Dark Chocolate Cashew Almond Butter Cookies

I meant to publish this recipe a few months ago, but I didn’t have the photos ready.  I still don’t have the perfect photo sequence for how to make these cookies.  But it’s the middle of the Open and these cookies were thought up between a few crossfitters so better like this than never, right?  Besides, what better timing than the middle of the CrossFit Open Games to tell you how I got started on CrossFit and baking paleo cookies.

I started CrossFit in February last year.  I had been given a tough teaching schedule at my school and they weren’t letting me push back on it.  As I despaired, I felt God say to me, “Han-Na, you’re stronger than you think you are.” Since I often experience God in physical activities, I decided to also translate that into trying out CrossFit to see how strong I was.  This was after months of pushing back on my coaches because I was very happy in the Bootcamp classes and not interested in getting stronger.

Pretty soon, it was clear to my coaches, that I had the potential to lift heavy weights.   I, on the other hand, intimidated by lifting anything vaguely heavy and the technicalities of the lifts, really did not enjoy the barbell work for the first few months.  Not long ago, one of them encouraged me, as I was going for my 1 rep front squat max, that I had the ideal physique of a squatter.  I’m not entirely sure what he means by that, do you?  Still, I managed 72kg that day, which I was delighted with.

Then one day, one of my coaches asked me when I was going to bake some paleo cookies for her.  I told her that Christina (of Joyfully Nutty) and I had just been talking about how to use cashew almond nut butter in baked goods and so why not try them in a cookie.

So, thank you Minna and the CrossFit community for pushing us into trying to make these paleo cookies.

I use the Dazed and Cashewed, cashew almond nut butter from Joyfully Nutty.  You could make these with a cashew nut butter or an almond nut butter, it comes down to preference.  I went off the back of Julie Wampler’s recipe from Table for Two, and experimented with reducing and changing the sugar to make it suitably paleo.  I was also baffled as to whether palm sugar is paleo or not.  It would appear that the paleo community embrace coconut sugar but differ on palm sugar.  The little personal research that I’ve done suggests that palm sugar is produced in the same way as coconut sugar, and therefore is paleo.

Then I discovered this delightful nugget.  With the addition of different spices, I could halve the sugar or omit the sugar completely and they would still result in tasty ‘sweet’ morsels, that are soft yet chewy.  Curious, I tried a sugar free version, which admittedly, is more delicate and will thus crumble more easily, but because there’s a lot of dark chocolate, you hardly notice that the sugar is gone.

Top tip: by adding spices, you can reduce or omit the sugar.

I believe that you could make these vegan by replacing the egg with flaxseed or chia seed but I’ve yet to try it.

Baking these is a cinch (read the method below), which is another reason why I like them.  You want to satisfy that cookie craving but don’t have to wait 24 hours to rest the cookie dough.  From start to finish, you could be sitting down with a cookie (or twelve) in 30 minutes, or less.

So here is the Dark Chocolate Cashew Almond Butter Cookies, adapted from Table for Two.

Makes between 12-14 cookies

  • 1 large egg
  • 60g palm sugar (*optional)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 250g cashew almond nut butter
  • 1tsp bicarbonate of soda
  • 100g dark chocolate*, broken into chunks. Or you could use dark chocolate chips. I use small round discs of chocolate.
  • *use one that is at least 65%.

Method

  1. Preheat the oven to 180ºC/350ºF or gas mark 4.  Line a large baking tray (or two depending on size) with baking paper.
  2. Whisk the egg, sugar, salt, cinnamon and turmeric together in a small mixing bowl.
  3. Add in the cashew almond nut butter and the bicarbonate of soda and mix until it is all combined.
  4. Stir in the dark chocolate.
  5. Place generous tablespoon dollops (sort of ping pong ball sized) of the cookies on the baking tray.  I use a 1½tbsp cookie scoop for the sake of ease now.
  6. Bake in the middle rack of the oven for 12-15 mins, or 10-12 mins in a fan oven.
  7. They will have puffed up a bit and be lightly golden brown in colour.  As they cool they will collapse slightly into themselves.  At this point, I like to place a chocolate disc on top of each cookie because I like how it looks.  Allow them to cool completely on the baking tray and then store them in an airtight container.
  8. In Cambodia’s humid climate, they’ll keep outside the fridge for about 3-4 days.  I normally store them in the fridge and they’ll happily chill out there for 2 weeks.  Or they freeze well.  But you know, they’re pretty tasty straight out of the freezer too.

The verdict?  You’d never know that this was a gluten free, dairy free cookie.  Soft  in texture and rich in flavour.  I get orders for these, with sugar, without sugar, without chocolate… hehe.  So you know that they’re customisable.  I like them as a pre-workout snack.  I also like them because it’s such an easy recipe.

Lemon Polenta Cake and the Last Time that I will…

Each time, someone comes to visit me from the UK, I ask them to bring me over some lemons.  At 75 cents each here, they’re a much dearer ingredient than their equally delicious greener counterpart, the lime.  This time, I think that my sister brought me over a kilo of them; a much better suited present than the kilo of homegrown beetroot she once left in my fridge.  So now, I have a treasure trove of lots of lemony lemons living in the bottom of my fridge.

And so, I’ve begun to work through my favourite lemon recipes.  Last weekend, I came across this one, from 2013.  Don’t be put off by the name.  It’s actually a really simple cake to make and makes an elegant dessert.  When I mentioned it to Caroline, my housemate, she decided that lemon polenta cake was her preferred dessert over Kampot Pepper Brownies.  Actually, that Saturday evening, she declared that it to be her favourite of all my cakes that she’s ever eaten.

I wasn’t so sure.  I wanted rather a lot more tartness, than the original recipe was giving me.  So, I changed the syrup to a drizzle, reducing the amount of sugar and replacing the icing sugar with caster sugar.  The second time round, the lemony tartness complemented the sweetness of the cake beautifully.lemon polenta cake 1

So, let me set the scene, if you are reading this blog for the first time.  It’s June 2013. I’m preparing to leave one life behind and begin a new one in Cambodia.  I’ve just finished working my last week as a Skills Programme Coordinator at the University of Warwick and in the midst of packing up my Redfern flat.  I’m too busy to notice the misery and grief that will soon engulf me.  Thus, I have a much more pragmatic and much less miserable outlook to goodbyes than in this later post.

The last time that I will:

  • Have a tutor meeting
  • Wash my mug at work
  • Walk out the doors in University House as a Student Careers and Skills employee
  • Teach a Warwick Skills Workshop
  • Bake in my redfern kitchen

These last two weeks have been full of ‘last times’. I’ve been trying to acknowledge each one as they come round. It’s not a fully indulgent, let’s sit down and have a cry over them. I realised that you know the last thing I’ve baked in each of my kitchens every time that I’ve moved. I think that I’ve chronicled each move with a recipe.  The countless hours of mundane wrapping and packing into boxes, only made bearable by thoughts of food.  Haha…  Reminisce with me. There was the lemon and ginger cheesecake when I left Cryfield. Then I was up til the wee hours making pots of bramble jelly when I moved out of Heronbank. I made a valiant attempt at using up my bananas and created whiskey, chocolate and banana cake when I moved out of the Subwarden flat in Cryfield 3, which I affectionately refer to as my rabbit warren years. Finally, I have to to move out of Redfern and I baked lemon polenta cake.

I’ve done better with each move. David worries less and less about whether I’ll get everything packed up in time for the removal men.

This time I packed away my baking equipment and books the Sunday I finished work; a week before the moving deadline and the day before my CELTA course is due to start.

Which leaves me sitting forlornly at my kitchen table, reminiscing about the huge amounts of baking I’ve done in this kitchen. I don’t know when I’ll be baking again in the next 4 weeks during my CELTA course and I feel bereft.

Lemon Polenta cake, adapted from Nigella

Ingredients

  • 200g unsalted butter
  • 200g golden caster sugar
  • 200g ground almonds
  • 100g polenta (try to find the finest)
  • 1½tsp baking powder – if you want it to be gluten free then use the gluten free variety.
  • 3 eggs
  • a pinch of salt
  • zest of 2 lemons

Lemon Drizzle:

  • Juice of 2 lemons
  • 75g golden caster sugar

Method

1. Preheat the oven to 180°C, 350 °F, Gas Mark 4. Grease and line a 23cm springform round cake tin.

2. In one bowl, measure out the ground almonds, polenta and baking powder and give them a stir.

3. In another bowl, add the butter, sugar, salt and lemon zest.  Cream them together, preferably with an electric mixer or a stand mixer, for a couple of minutes until the mixture changes colour and becomes light.

4. Add in an egg and mix.  Then add a third of the dry ingredients from step no.2  All the time, keep on mixing.  Alternate between adding an egg and dry ingredients.  Nigella notes that you can make this cake entirely gluten-free if you don’t have gluten-free baking powder by beating all the ingredients really hard at that this point.

5. Splodge the mixture into the prepared cake tin and smooth it out with a spatula or a knife.

6. Bake in the oven for 40 minutes.

7. Meanwhile, make the lemon drizzle.  Measure out the sugar in a bowl and then add the juice of two lemons.  Stir together until the sugar dissolves in the lemon juice.

8. The cake is baked when it’s coming away from the edges, firm on top but still rather pale colour on top.  Prick holes to allow the drizzle to seep through.  As you can see, a toothpick can look rather unsightly.  But who cares, when it’s this delicious.  Pour the prepared lemon drizzle over the top of the cake.  Leave to cool as long as you can bear in the cake tin before eating it.

And I have to say – it’s even more delicious the morning after, when the lemons and almonds have had a bit more time to get to know each other and the flavours have melded together.

Nigella’s Clementine Cake

I had 6 crinkly clementines which had definitely gone past their prime!  Shrivelled clementines, tangerines, oranges… are so ucky to eat, yet it seemed such a waste to throw them away.  At the back of my mind I knew that I’d seen a cake recipe using clementines before in Green and Black’s ‘Chocolate Recipes‘.  When I opened the recipe book, I discovered that I’d even photocopied the recipe for a shopping trip.  So, I must have wanted to make it at some point a few months ago…  I wonder what stopped me… hmmm… maybe it was the expense of buying ground almonds?  Anyway, I had some ground almonds leftover from a Lemon Polenta Cake baking moment, which was a good start.

So first, I had to boil and simmer the clementines whole for 2 hours.  2 hours!  Perhaps I should have read through the recipe first before starting… (ah! maybe this is what put me off before).  I covered the clementines with cold water, brought it to boil and then simmered it for 2 hours.

While the clementines were simmering away, I started to put the other ingredients together and realised two things.  Firstly, I had run out of baking powder and secondly, I didn’t have 6 large eggs.  Oooops…  Quick trip to the Co-op sorted out the baking powder.  For the second thing, though, I already had 5 eggs and didn’t want to buy more eggs.  So, I thought maybe this would be a good opportunity to try out a friend’s suggestion for substituting a spoonful of vinegar for an egg (see baking tip: substituting vinegar for an egg).  Admittedly, in the mixing stage, I was still wondering whether it would work and how it would it affect the overall taste of the cake.  The cake mixture definitely smelt like vinegar; the baked cake tasted divine.

Anyway, here’s the recipe for Nigella’s Clementine Cake adapted from ‘Chocolate Recipes’. 

Ingredients
4-5 clementines (I used 6), skin on to weigh 375g (13oz)
6 large eggs (well, you know what I did when I only had 5)
100g/4oz sugar (I tend to halve the sugar so do add more if you’d like it even sweeter)
250g/9oz ground almonds
1 heaped tsp of baking powder
100g/4oz good quality dark orange chocolate (grated)

Method

1. Cover the clementines with cold water in a saucepan and bring it to boil.  Then let the clementines merrily simmer away for 2 hours.  I kept checking up on it to make sure the pan didn’t boil dry, because I do that quite often when I’m hardboiling eggs – ooops!  Then cool them down by covering them with cold water again in the pan for about 10 minutes.  Drain them and then cut the clementines in half to take out any seeds.  Put them in a food processor and whizz them up so that the clementines are reduced to pulp – skin, pith and all.

2. At this point, preheat the oven to 190°C/375°F/gas mark 5 and grease and line the cake tin with greaseproof paper.

3. Mix the ground almonds, sugar and baking powder in one bowl.

4. Beat the eggs in another bowl.

5. Add 3. to the eggs and mix well.

6. Stir in the pulped clementines to 5.

7. Pour the mixture into the cake tin and bake for 1 hour.  At 40 mins, cover the top with foil or greaseproof paper so that the top doesn’t burn.  To test whether it is ready to come out the oven, pierce the middle of the cake with a clean, cold skewer and when it comes out clean you know the cake is ready.

8. Remove the cake from the oven and immediately put the grated chocolate on top of the cake while it is still in the tin – watch the chocolate start melting and smell gorgeous!  Leave the cake to cool in the tin and then remove from the tin to store it in an airtight container.

The verdict?  This cake is sooo simple to bake.  Also it’s made with ground almonds and there’s no butter so, it’s gluten free and dairy free.  The cake tastes better when it’s been left for a day and it gets really moist and gooey.  The flavour of the clementines and almonds have also had time to develop too.  So, let it rest a while and enjoy every mouthful.  Mmmm… Mmmm….
